you get that bunch of banana's either for a quick breakfast or for your kids and they don't get eaten, and you end up throwing them away cause they are completely black.
well stop it. make this best ever banana bread using those really nasty banana's! the more mushy and almost completely bad they are the better their flavor will be!
what you'll need:
3 or 4 smashed ripe bananas (best if the outer skin is almost completely brown and bananas are bruised and mushy to begin with. almost on the verge of being completely bad. it gives the strong best flavor)
1/2 cup of sugar
1/2 cups of brown sugar
1 beaten egg
1 tsp vanilla
3 1/2 tbs baking powder
1/2 tsp of salt
2 1/2 cups of flour
1/2 cup of milk
3 tbs vegetable oil
1/2 cups coarsely chopped nuts of choice (optional)
preheat oven to 350 degrees, mix milk, vanilla, bananas, oil and the egg together with a spoon in a large mixing bowl. add sugar and brown sugar and mix well. next add the salt and baking powder slowly add the flour 1/2 a cup at a time mixing completely before adding the next 1/2 cup. add nuts if desired. mixture should be a goopy mess with large lumps of ingredients in it. just mix until the flour is all completely mixed in, do not over mix. and do not crush or mush lumps. you need them.
pour into a heavily buttered small bread pan, or a small square pan. bake for one hour. or until edges are a dark brown and pull away from the sides and a toothpick inserted in the middle comes out clean. cool enough to handle and pile lots of butter on and enjoy.
this is my own recipe, i made from about five different banana bread recipes and it really comes out the best i have ever made. so please forgive me if the instructions sound a bit weird. i wrote it how i made it. but this is the most moist and fluffy bread i have ever made. it's worth a try. and please let me know if you make it and how you liked it. i have gotten rave reviews from the neighbors and my kids.
